My friend Kelly, who’s vegan, shared a post on Facebook about this salad called Nish Nosh Salad. She said it was amazing, so I decided to try it. And you know what? She was right! It’s become one of my favorite salads now. The colors are so pretty, and it tastes really good.

  • 1 4oz packet of defrosted acerola frozen purée
  • 1 cup oil
  • 1/3 cup honey
  • 1/4 cup sugar
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons white vinegar
  • 1/4 teaspoon salt

Step1:

Blend the defrosted acerola purée, oil, honey, sugar, balsamic vinegar, white vinegar, and salt until smooth.

Step2:

In a large salad bowl, mix the spring mix, kale, coleslaw mix, grape tomatoes, cucumbers, radishes, green pepper, orange pepper, and hearts of palm.

Step3:

Crumble the nish nosh crackers over the salad.
